Cheeseburger Casserole | Cookies & Cups

Ingredients:

– 1 pound lean ground beef

– 1 yellow onion, diced

– 1 teaspoon kosher salt

– 1 teaspoon ground black pepper

– 1 teaspoon chili powder

– 1 teaspoon Italian seasoning

– 2 1/2 tablespoons tomato paste

– 2 garlic cloves, minced

– 3 cups beef broth, or chicken stock

– 12 oz cavatappi pasta, uncooked (rotini also works well)

– 1/3 cup milk

– 3/4 cup sour cream

– 1 1/2 cups mozzarella cheese, shredded

– 1 1/2 cups cheddar cheese, shredded

– Green onions for garnish

Instructions:

1. Preheat your oven to 375°F.

2. In a large skillet over medium-high heat, brown the ground beef, until almost completely cooked. Add the diced onion, salt, pepper, chili powder, and Italian seasoning. Cook until the onion is softened.

3. Stir in the tomato paste and minced garlic, then add the beef broth and pasta. Simmer until the pasta is al dente, about 10 minutes.

4. In a separate bowl, whisk together the milk and sour cream. Stir this mixture into the skillet, then add half of the shredded cheese. Stir until the cheese is melted.

5. Transfer the mixture to a casserole dish and top with the remaining shredded cheese.

6. Bake in the preheated oven for 10-15 minutes, until the cheese is melted and bubbly.

7. Let the casserole sit for a few minutes before serving, garnished with green onions.
