Crunchy muesli bars (granola bars)

Ingredients:

– 1 1/2 cups rolled oats

– 1/2 cup almonds, roughly chopped

– 1/4 cup pepitas

– 1/4 cup sultanas

– 1/2 tsp cinnamon

– Pinch of salt

– 1/2 cup natural peanut butter

– 1/2 cup honey

– Mini chocolate chips (optional)

Instructions:

1. Preheat the oven to 160°C/325°F (140°C fan-forced).

2. Spread the rolled oats and almonds on a baking tray and toast in the oven for 10 minutes, until slightly golden.

3. In a microwave-safe bowl, heat the peanut butter and honey for 30 seconds until melted. Stir to combine.

4. In a large bowl, mix the toasted oats and almonds with pepitas, sultanas, cinnamon, and salt. Pour the melted peanut butter and honey over the mixture and mix well.

5. Line a 20 cm/8″ square pan with parchment paper. Press the mixture evenly into the pan.

6. Optional: sprinkle mini chocolate chips on top and press them into the mixture.

7. Chill the mixture in the fridge for 1 hour until firm enough to cut into bars.

8. Cut the mixture into 10 bars and place them back in the oven for 25 minutes, or until golden.

9. Allow the bars to cool completely before storing them in an airtight container. Enjoy crunchy muesli bars for up to 3 weeks!

Note: For nut allergies, you can use 2 3/4 cups of your favorite muesli mix instead of almonds and pepitas. You can also use hazelnut or cashew butter as a substitute for peanut butter.
