Making wontons with Thermomix Tm6
Made large wontons for dinner yesterday. The dish was to be 1 large wonton paired with pan fried foie gras. However, it become a fusion dish of that with Hokkaido scallop and abalone. This Cookidoo wonton recipe was well liked. Search for wonton soup. I made some adaptations and used the recipe for the filling only. Instead of using the soup from the recipe, I made a bone broth using pork and chicken bones. Ingredients ( 4 portions ) A
1 garlic clove
2 cm fresh root ginger, peeled, halve
1 spring onion, white part only
1 long red chilli, deseeded, optional 1 sprig fresh coriander, roughly chopped, 3-4 cm pieces B
120g pork minced
120g prawns, raw, peeled, deveined C
1 egg yolk, medium egg
1 tbsp soy sauce
1 tbsp Shaoxing wine
2 tsp sesame oil, plus extra for greasing D 800g water for steaming Wrappers 20 – 30 wonton wrappers, any shape
1 egg white, from medium egg Method :
1)Chop A, 3s Sp7. Twice. Scrape down each time. 2)Add B, Turbo 0.5s 3 times. 3)Add C, 1s Sp4. Set aside. 4)Grease Varoma dish and tray with sesame oil. Set aside. 5)Wrap wonton. Steam 12m Var Sp1.
