Why do you use split red lentils in this recipe? Red lentils cook faster than other types of lentils, and split red lentils cook even faster because they are literally the lentils split in half. We deliberately overcook them in this recipe so they break down and thicken the sauce naturally.
Can I use canned lentils instead of dried lentils? I haven’t tried it myself, but it should work. Just drain the canned lentils and add them with the chickpeas, skipping the entire lid-on simmer step.
What can I serve with this Afghani chickpea curry? You can serve it with basmati rice on the side or with flatbreads for dunking. If you can find traditional Afghani flatbreads, that’s ideal, but any flatbread will do.
