Chicken and vegetable risotto in the thermomix
I decided to film my chicken and vegetable risotto. In the thermomix it’s so easy. You can use whatever vegetables you have and it’s always delicious.

Ingredients
Butter and garlic to sauté
Arborio rice
Chicken, breast or thigh, diced
Sliced mushrooms
Diced zucchini
Sundried tomatoes, roughly chopped
Tomato paste
Chicken stock, I use chicken stock concentrate and add water
Basil
Onion powder
Salt and pepper to taste
Verjuice or white wine
Parmesan cheese, grated.

- Mantequilla y ajo para saltear
- Arroz arborio
- Pollo, pechuga o muslo, cortado en cubos
- Champiñones en rodajas
- Calabacín en cubos
- Tomates secos, troceados
- Pasta de tomate
- Caldo de pollo, yo uso concentrado de caldo de pollo y añado agua
- Albahaca
- Cebolla en polvo
- Sal y pimienta al gusto
- Verjus o vino blanco
- Queso parmesano, rallado
