Ingredients
For the dough:
300 g soft butter
250 g sugar
1 packet vanilla sugar
6 eggs
400 ml coconut milk
400 g flour
1 packet baking powder
100 g desiccated coconut (shredded coconut)
For soaking (optional, but highly recommended):
60 ml Monin coconut syrup
140 ml water
(➡️ I used about half of this. Depending on how moist you like your cake, you can use a bit more or less.)
For the topping:
400 g white chocolate
Desiccated coconut for sprinkling
Instructions (Thermomix)
1. Preheat the oven to 180°C (top/bottom heat) and line a deep baking sheet with baking paper.
2. Add butter, sugar, and vanilla sugar to the mixing bowl.
2 minutes | Speed 4
3. Add eggs.
1 minute | Speed 4
4. Add coconut milk.
20 seconds | Speed 4
5. Add flour and baking powder.
20 seconds | Speed 5
6. Add desiccated coconut.
15 seconds | Reverse mode | Speed 3
7. Spread the dough onto the baking sheet and bake for approx. 25–30 minutes at 180°C (top/bottom heat). Test with a toothpick to check if done.
Soaking
1. Mix Monin coconut syrup with water.
2. Poke the warm cake multiple times with a wooden skewer or fork and gradually drizzle with the syrup mixture.
(I used about half of the mixture — this makes the cake beautifully moist without being too wet.)
Decoration
1. Allow the cake to cool down completely.
2. Melt 400 g of white chocolate, spread evenly over the cake, and immediately sprinkle with desiccated coconut.
3. Let the chocolate set, then cut the cake into pieces.
💡 My Tip:
The cake can be baked a day ahead and stays wonderfully moist!
