Ingredients:
Papdi (Air-Fried) –
Oat flour – 20g
Whole wheat flour- 20g
Ajwain – ¼ tsp
Salt – to taste
Ghee – 1 tsp
Water – to knead
Toppings –
Green moong sprouts -150g (boiled)
Whipped Greek yogurt – 150g
Green chutney – 1 tbsp
Imli chutney – 1 tsp
Chaat masala – ½ tsp
Red chilli powder – ¼ tsp
Coriander – 1 tbsp (chopped)
Pomegranate – 25g
Sev – 5g
Method –
* In a bowl, mix flour, ajwain, salt, and ghee. Add water and knead into a stiff dough.
* Roll it thin, cut into small discs, and air fry until golden and crispy.
* Arrange the papdi on a plate.
* Top with boiled sprouts and spread dahi evenly.
* Add green chutney and imli chutney.
* Sprinkle chaat masala, red chilli powder, coriander, pomegranate, and sev.
* Serve immediately for maximum crunch.

Ingredientes para Zero Maida Papdi Chaat
- Papdi (Air-Fried) – Oat flour – 20g, Whole wheat flour- 20g, Ajwain – ¼ tsp, Sal – al gusto, Ghee – 1 tsp, Agua – para amasar
- Toppings – Green moong sprouts -150g (hervidos), Whipped Greek yogurt – 150g, Green chutney – 1 cda, Imli chutney – 1 cdta, Chaat masala – ½ cdta, Chile en polvo – ¼ cdta, Cilantro – 1 cda (picado), Granada – 25g, Sev – 5g
Instrucciones para Zero Maida Papdi Chaat
- En un tazón, mezcla la harina, ajwain, sal y ghee. Agrega agua y amasa hasta obtener una masa firme.
- Extiende la masa fina, corta en discos pequeños y fríe en aire hasta que estén dorados y crujientes.
- Coloca las papdi en un plato.
- Agrega los brotes de moong hervidos y extiende el yogur de manera uniforme.
- Agrega la chutney verde y la chutney de tamarindo.
- Esparce el chaat masala, chile en polvo, cilantro, granada y sev.
- Sirve inmediatamente para obtener la máxima crujienteza.
