This version of Vada pav is a twist to traditional recipe and baking everything from scratch is such a satisfying experience 😍
Ingredients
400gm all purpose flour (maida)
1/2 tsp salt
280ml milk
5gm yeast
1.5 tsp sugar
25gm butter
For potato filling
1 tbsp Oil
Rai (mustard seeds) 1/4th tsp
Jeera (cumin seeds) ½ tsp
Kadi patta (curry leaves) 8-10 nos.
Ginger garlic chili paste
Hing (asafoetida) 1/4 tsp
Turmeric powder ½ tsp
Salt to taste
Garam masala 1/4 tsp
Potatoes 8-10 medium size
Lemon juice 1 tbsp
Fresh coriander a handful
Process
1. In a bowl, mix lukewarm milk, yeast, and sugar.
2. Add maida and salt, then knead into a rough dough.
3. Incorporate the butter and knead until the dough is smooth, which will take approximately 10-15 minutes.
4. Place the dough in a greased bowl, cover it, and let it proof for 2 hour.
For the filling:
1. Heat oil in a kadhai and add cumin seeds, mustard seeds and curry leaves.
2. Once they splutter add ginger, garlic, and chili paste, hing and cook for 30 seconds.
3. Add turmeric, salt, Garam masala and mix well.
4. Add mashed potatoes, lemon juice and fresh coriander. Mix well to prepare the filling.
After the dough has risen:
1. Punch it down to release the air and divide it into equal parts.
2. Flatten each portion, add red chutney and the aloo filling, and seal all the edges to form into balls.
3. Repeat the process with the remaining dough and arrange them on a baking tray/ airfryer basket.
4. Cover them and let them prove for 45 minutes or until they double in size.
5. Brush them with milk, decorate with chilies, and Airfry in a preheated Airfryer at 160 degrees Celsius for 12-15 minutes.
6. Serve hot and enjoy!

Ingredientes para Vada pav with twist | Masala pav
- 400gm de harina de trigo (maida)
- 1/2 cucharadita de sal
- 280ml de leche
- 5gm de levadura
- 1.5 cucharaditas de azúcar
- 25gm de mantequilla
Instrucciones para Vada pav with twist | Masala pav
1. En un tazón, mezcla la leche tibia, la levadura y el azúcar.
2. Agrega la harina de trigo y la sal, luego amasa hasta obtener una masa rugosa.
3. Incorpora la mantequilla y amasa hasta que la masa esté suave, lo que tomará aproximadamente 10-15 minutos.
4. Coloca la masa en un tazón engrasado, cúbrela y déjala reposar durante 2 horas.
Para el relleno:
1. Calienta aceite en un kadhai y agrega semillas de comino, semillas de mostaza y hojas de curry.
2. Una vez que estallen, agrega pasta de jengibre, ajo y chile, hing y cocina durante 30 segundos.
3. Agrega cúrcuma, sal, Garam masala y mezcla bien.
4. Agrega papas machacadas, jugo de limón y cilantro fresco. Mezcla bien para preparar el relleno.
Después de que la masa haya crecido:
1. Deja que la masa se desinfle para liberar el aire y divídela en partes iguales.
2. Aplana cada porción, agrega chutney rojo y el relleno de aloo, y sella todos los bordes para formar bolas.
3. Repite el proceso con la masa restante y colócalas en una bandeja para hornear/cesta de la Airfryer.
4. Cúbrelos y déjalos reposar durante 45 minutos o hasta que dupliquen su tamaño.
5. Píntalos con leche, decóralos con chiles y hornéalos en una Airfryer precalentada a 160 grados Celsius durante 12-15 minutos.
6. ¡Sírvelos calientes y disfruta!
