Air Fryer Potatoes & Veggies with Oregano
Ingredients (2–3 servings):
2 medium potatoes (red, gold, or russet), cut into cubes or wedges
1–2 tbsp olive oil (or cooking spray)
1–2 tsp dried oregano (or fresh, finely chopped)
½ tsp garlic powder (optional)
Salt & black pepper to taste
Optional: a pinch of chili flakes for heat
Instructions:
Preheat air fryer to 390°F (200°C).
In a large bowl, toss potatoes and veggies with olive oil, oregano, salt, pepper, and garlic powder.
Place them in the air fryer basket in a single layer (don’t overcrowd).
Cook for 20–25 minutes, shaking the basket halfway through, until potatoes are golden and veggies are tender.
