Slow Cooker Beef Stew
Cooking the stew – Mix everything together in the slow cooker, then add the celery, carrot, and potatoes. Give it a good mix to coat everything in the sauce. Cook on low for 10 hours. That’s how long it takes for the beef to become beautifully tender and the sauce to develop a deep, rich flavour. 1 hour before finishing – Remove the lid to let the sauce reduce and thicken slightly. If it’s not thick enough for your taste, mix 1.5 tbsp of cornflour / cornstarch with a splash of water until smooth, then stir it into the stew. Cook for a further 30 minutes – 1 hour until the sauce thickens to your taste. Serve – Ladle the beef stew into bowls, sprinkle with fresh thyme leaves if desired, and serve with crusty bread or over mashed potatoes.
