Ingredients
For soaking:
1 cup soya chunks
3 red chilies
Channa dal (½ cup approx)
Hot water (for soaking)
For gravy:
2 tbsp oil
1 tsp vadagam
1 onion (finely chopped)
Curry leaves
1 tomato (chopped)
Salt (as needed)
¼ tsp turmeric powder
2 tbsp homemade red chili powder
3 tbsp ground coconut paste
Tamarind water (½ cup)
Water (as needed)
For urundai (balls):
Soaked channa dal (drained)
Soaked soya chunks (squeezed, without water)
Soaked red chilies
3–4 garlic cloves
Few curry leaves
½ tsp fennel seeds
Salt (if needed)
👩🍳 Method
1️⃣ Soaking
Soak channa dal, red chilies, and soya chunks in hot water for 2 hours. Drain completely.
2️⃣ Prepare the Gravy
Heat oil in a pan.
Add vadagam.
Add finely chopped onion and curry leaves. Sauté well.
Add chopped tomato and cook until soft.
Add salt, turmeric, and red chili powder. Mix well.
Add ground coconut paste and some water.
Close the lid and boil for 10 minutes.
3️⃣ Add Tamarind Water
Pour tamarind water into the boiling gravy.
Let it simmer for 2–3 minutes.
4️⃣ Prepare the Urundai
Grind soaked channa dal, soya chunks, red chilies, garlic, curry leaves, fennel, and salt coarsely (no water).
Shape into small balls (urundai).
Keep some mixture aside for pakoda.
5️⃣ Cook the Urundai
Gently place the urundai into the boiling gravy.
Do NOT mix. Just pour gravy over the balls.
Close and cook for 5 minutes on medium flame.

6️⃣ Air Fry Pakoda
Make small pakoda from leftover mixture.
Air fry at 370°F for 15 minutes.
Flip, lightly brush oil, and air fry again at 370°F for 5 minutes.
Crispy, protein-packed pakoda is ready! 😍

Una deliciosa receta de Urundai Kuzhambu llena de proteínas acompañada de crujientes pakodas hechos al aire.
Ingredientes para Protein Packed Urundai Kuzhambu
- 1 taza de trozos de soja
- Channa dal (aprox. ½ taza)
- 3 chiles rojos
- Agua caliente (para remojar)
- 2 cucharadas de aceite
- 1 cucharadita de vadagam
- 1 cebolla (picada finamente)
- Hojas de curry
- 1 tomate (picado)
- Sal (al gusto)
- ¼ cucharadita de cúrcuma en polvo
- 2 cucharadas de polvo de chile rojo casero
- 3 cucharadas de pasta de coco molida
- ½ taza de agua de tamarindo
- Agua (según sea necesario)
- 3–4 dientes de ajo
- ½ cucharadita de semillas de hinojo
Instrucciones para Protein Packed Urundai Kuzhambu
- Remojar channa dal, chiles rojos y trozos de soja en agua caliente durante 2 horas. Escurrir completamente.
- Calentar aceite en una sartén. Agregar vadagam, cebolla picada y hojas de curry. Sofreír bien. Añadir tomate picado y cocinar hasta que esté suave.
- Agregar sal, cúrcuma y polvo de chile rojo. Mezclar bien. Añadir pasta de coco molida y un poco de agua. Tapar y hervir durante 10 minutos.
- Verter agua de tamarindo en el guiso hirviendo. Dejar cocer a fuego lento durante 2–3 minutos.
- Moler channa dal remojado, trozos de soja, chiles rojos, ajo, hojas de curry, hinojo y sal de forma gruesa (sin agua). Formar pequeñas bolas (urundai).
- Colocar suavemente los urundai en el guiso hirviendo. NO mezclar. Simplemente verter el guiso sobre las bolas. Tapar y cocinar durante 5 minutos a fuego medio.
