3. MAKE THE STIR FRY SAUCE
Mix the light soy sauce, oyster sauce, Chinese cooking wine, sesame oil, sugar, cornflour, and white pepper together in a bowl. This will be the flavorful sauce that will coat the beef and vegetables.
4. COOKING THE STIR FRY
Heat some oil in a wok or large pan over high heat. Add the garlic and onion and cook until fragrant. Add the velveted beef slices and cook until browned and almost cooked through.
Add the carrots and capsicum and cook for a few minutes until slightly softened. Add the bok choy and green onions and cook until the vegetables are crisp-tender.
Pour in the stir fry sauce and toss everything together until well coated. Cook for another minute until the sauce thickens slightly.
5. SERVE
Serve the Chinese Beef Stir Fry hot over steamed rice or noodles. Garnish with some extra green onions if desired.
