Seasoning:

I small onion

1 red pepper

Ginger and garlic – fresh

Handful of coriander – fresh

Salt to taste

Pepper to taste

Chicken seasoning

White pepper.

Some olive oil

Blend all the fresh ingredients and add to chicken.

Add dry ingredients plus olive oil:

Let it marinate for about 1 hour before baking. Make sure to turns sides when baking.

For the jollof rice l used Basmati rice.

Start by fryiimg some tomato paste and chopped onion. I used same seasoning as the chicken. When it’s cooked wash your rice with boiled water and add. Make sure the rice is at same level with the sauce/water. Cover the rice with foil paper and let it come to a simmer. Reduce the heat and cook slowly until it’s ready.

Before adding the rice remove a little of the sauce to rub on your chicken about 5 mins before you take it out of the oven.
