Recipe in English:
Ingredients:
-Laung (Cloves) 3-4
-Javitri (Mace) 1 piece
-Jaifal (Nutmeg) ¼ piece
-Sabut dhania (Coriander seeds) 1 & ½ tbs
-Zeera (Cumin seeds) 1 tbs
-Ajwain (Carom seeds) ¼ tsp
-Lal mirch (Red chilli) crushed 2 tbs
-Tatri (Citric acid) ¼ tsp
-Himalayan pink salt ½ tsp or to taste
-Lehsan powder (Garlic powder) ½ tbs
-Kala namak (Black salt) ½ tsp
-Amchor powder (Dried mango powder) ½ tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tbs
-Dahi (Yogurt) ¼ Cup
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Zarda ka rang (Orange food color) 1 pinch
-Cornflour 2 tbs
-Soy sauce 2 tbs
-Chilli sauce 2 tbs
-Lemon juice 1 tbs
-Chicken mix boti 1 kg
Directions:
-In frying pan,add cloves,mace,nutmeg,coriander seeds,cumin seeds,carom seeds & dry roast on low flame until fragrant.
-Let it cool.
-In mortal & pestle,add roasted spices,red chilli crushed,citric acid,pink salt & crush well.
-Add garlic powder,black salt,dried mango powder,kashmiri red chilli powder & mix well.Patakha spice mix is ready!
-In a bowl,add yogurt,ginger garlic paste,orange food color,cornflour,prepared spice mix (reserve 1 & ½ tbs for later use),soy sauce,chilli sauce,lemon juice & mix well.
-Add chicken & mix well,cover & marinate for 8 hours or overnight in refrigerator.
-Set Dawlance microwave oven at air fryer option h6 & start preheating.
-Place marinated chicken pieces on oven grill & sprinkle prepared spice mix.
-Place grill in preheated microwave oven & air fry at 200C for 10 minutes (1 beep) then again set for 10 minutes (1 beep).
-Apply cooking oil on both sides,flip & sprinkle prepared spice mix & air fry at 200C for 10 minutes (1 beep) then again set for 10 minutes (1 beep).
-Serve with raita & salad!

-Thanda ker lein.
-Mortal & pestle,add roasted spices,lal mirch crushed,tatri aur pinks salt dal ker ache tarhan crush ker lein.
-Lehsan powder,kala namak,amchor powder aur kashmiri lal mirch powder dal ker ache tarhan mix karein.Patakha spice mix tayyar hai.
-Bowl mein dahi,adrak lehsan paste,zarda ka rang,cornflour,tayyar spice mix (reserve 1 & ½ tbs for later use),soy sauce,chilli sauce aur lemon juice dal ker ache tarhan mix ker lein.
-Chicken dal ker ache tarhan mix karein aur dhak ker 8 hours or overnight kliya refrigerator mein marinate ker lein.
-Dawlance microwave oven ko air fryer option h6 per set karein & preheat ker lein.
-Marinated chicken pieces ko oven grill per rakh dein & tayyar spice mix sprinkle ker lein.
-Grill ko preheated microwave oven mein rakh dein & 200C per 10 minutes (1 beep) kliya air fry ker lein phir dubara 10 minutes kliya air fry ker lein (1 beep).
-Cooking oil ko dono sides per laga lein flip karein aur tayyar spice mix chirak dein aur 200C per 10 minutes (1 beep) kliya air fry ker lein phir dubara 10 minutes kliya air fry ker lein (1 beep).
-Raita & salad ka saath serve karein!

- Laung (Clavos) 3-4
- Javitri (Macis) 1 pieza
- Jaifal (Nuez moscada) ¼ pieza
- Sabut dhania (Semillas de cilantro) 1 y ½ cucharadas
- Zeera (Semillas de comino) 1 cucharada
- Ajwain (Semillas de alcaravea) ¼ cucharadita
- Lal mirch (Chile rojo) triturado 2 cucharadas
- Tatri (Ácido cítrico) ¼ cucharadita
- Sal rosa del Himalaya ½ cucharadita o al gusto
- Lehsan powder (Ajo en polvo) ½ cucharada
- Kala namak (Sal negra) ½ cucharadita
- Amchor powder (Polvo de mango seco) ½ cucharada
- Kashmiri lal mirch (Chile rojo de Cachemira) en polvo 1 cucharada
- Dahi (Yogur) ¼ taza
- Adrak lehsan paste (Pasta de jengibre ajo) ½ cucharada
- Zarda ka rang (Colorante alimentario naranja) 1 pizca
- Maicena 2 cucharadas
- Salsa de soja 2 cucharadas
- Salsa de chile 2 cucharadas
- Jugo de limón 1 cucharada
- Pollo mix boti 1 kg
Instrucciones para Air fried Patakha Chicken Pieces Recipe
– En una sartén, agregar clavos, macis, nuez moscada, semillas de cilantro, semillas de comino, semillas de alcaravea y tostar a fuego lento hasta que estén fragantes.
– Dejar enfriar.
– En un mortero, agregar las especias tostadas, chile rojo triturado, ácido cítrico, sal rosa y triturar bien.
– Agregar ajo en polvo, sal negra, polvo de mango seco, chile rojo de Cachemira en polvo y mezclar bien. ¡La mezcla de especias Patakha está lista!
– En un tazón, agregar yogur, pasta de jengibre ajo, colorante alimentario naranja, maicena, mezcla de especias preparada (reservar 1 y ½ cucharadas para usar más tarde), salsa de soja, salsa de chile, jugo de limón y mezclar bien.
– Agregar el pollo y mezclar bien, cubrir y marinar durante 8 horas o toda la noche en el refrigerador.
– Configurar el horno de microondas Dawlance en la opción de aire caliente h6 y empezar a calentar.
– Colocar los trozos de pollo marinados en la rejilla del horno y espolvorear la mezcla de especias preparada.
– Colocar la rejilla en el horno de microondas precalentado y cocinar al aire a 200°C durante 10 minutos (1 pitido), luego configurar de nuevo durante 10 minutos (1 pitido).
– Aplicar aceite de cocina en ambos lados, voltear y espolvorear la mezcla de especias preparada y cocinar al aire a 200°C durante 10 minutos (1 pitido), luego configurar de nuevo durante 10 minutos (1 pitido).
