The Best Air Fryer NY Cheesecake! 🍰
400g Cream Cheese
100g Butter
120g Sugar
200g Whipping Cream
200g Greek Yogurt
2 Eggs
2 Heaped Tsp Cornstarch
200g Lotus Biscuits
20cm Springform
Method
Prepare the Crust: Melt the butter. Finely crush the biscuits. Mix the melted butter with the crushed biscuits until well combined. Press the mixture firmly into the bottom of your mold using the bottom of a glass to make it smooth and even.
Chill: Place the mold in the freezer for 30 minutes to set.
Prepare the Filling (Part 1): In a mixing bowl, beat the cream cheese and Greek yogurt with an electric mixer until just combined (do not overmix).
Add Ingredients: Add the eggs, vanilla extract, sugar, and cornstarch to the mixture. Beat with the electric mixer until just combined. Set this mixture aside.
Whip the Cream: In a separate bowl, whip the heavy cream for 4–5 minutes until it forms stiff peaks (a foam-like consistency).
Combine: Gently fold the whipped cream into the cheese mixture and mix for about 30 seconds until incorporated.
Assemble: Remove the mold from the freezer. Pour the filling over the biscuit base. Tap the mold on the counter a few times to ensure the mixture is level and remove any air bubbles.
Cover: Cover the top of the mold tightly with aluminum foil.
Bake: Preheat your air fryer. Bake at 150°C for a total of 50 minutes. Remove the foil during the last 15 minutes of baking.
Cool and Serve: Remove from the air fryer and let it cool at room temperature for 30 minutes. Then, refrigerate for at least 2 hours (do not remove it from the mold during this time). Slice and serve
