Tender meat that stays in one piece, in this Bamia (okra and meat stew) made in the Thermomix. And yes, you can adjust a Thermomix recipe. These are the questions I get asked the most.
Do I have to follow the recipe exactly? Yes and no. There are recipes you should not change, like caramel and macarons, or any sweet whose ingredients work by chemistry, where the exact amounts and temperatures decide whether they set, rise, or fail. But when it comes to cooking, you can adjust it to your taste and what you have available. The first time, do it as it is. Based on that, if you have more space, you can add more, with extra cooking time.
Is the Thermomix only guided recipes? No. You can cook with guided recipes, with manual cooking, or with both, like I did here.
How do I get the meat this tender? That is the tip in this video. Extra cooking time in manual mode, then open cooking so it gets more tender without shredding. Stop when it is as tender as you want it.
Do I have to steam the okra? You can follow the recipe and steam it. On the TM7 you also have the choice to cook it in the gravy with open cooking, like I did. Try both and see what works for you.
How will I learn all the speeds and settings? With practice. It feels like a lot before you own one, but once you cook with it, it all makes sense.
