* Onion – 1 small, finely chopped
* Carrot – ¼ cup, grated
* Capsicum – ¼ cup, finely chopped
* Green chilli – 1
* Coriander – 2 tbsp
* Ginger – 1 tsp, grated

Method
1. In a bowl, combine bread crumbs, besan and suji.
2. Add chopped onion, carrot, capsicum, green chilli, ginger and coriander.
3. Add all the spices, salt and lemon juice.
4. Gradually add water and mix to make a thick, firm dough-like mixture. Don’t make it runny.
5. Rest the mixture for 10 minutes so the suji absorbs moisture.
6. Grease your hands with a little oil and shape into small flat cutlets.
7. Coat the outside with a little extra bread crumbs for a crispier crust.
8. Pan-fry: Cook with a little oil on medium heat for about 3–4 minutes on each side, until golden and crisp.
Air Fryer: Brush with oil and air fry at 180°C for 10–12 minutes, flipping halfway.
Tip: If the mixture feels too soft, add 1–2 tbsp bread crumbs. If it’s too dry, add 1–2 tbsp water.
