Cretan Orange Cake in the Air Fryer (Recipe from Our Holiday)

We had the most incredible orange and cinnamon cake on our last day in Crete, and I loved it so much that I asked for the recipe. It was handwritten on a scrap of paper, and this week I thought we could recreate it at home in my air fryer.

This is a proper Cretan speciality, light, fragrant with orange and cinnamon, and made with crumbled dried filo pastry instead of flour, which gives it the most unusual, delicate texture. I’ve soaked it in a orange and cinnamon syrup, a bit like a Greek take on lemon drizzle, and it needs a couple of hours to really soak through before serving. It’s also the first in a new air fryer recipe series I’ll be sharing and next week I will be sharing more Air fryer recipes since so many of you have asked for more ways to use it.

Cretan Orange Cake – Portokalopita

I’m using my Air Fryer and making two smaller ones

Use small cake tins or baking dishes that fits comfortably in your air fryer drawers ideally around 18cm x 12cm

For the cake, use:

* 200g filo pastry

* 2 eggs

* 100g caster sugar

* 150g Greek yoghurt

* 75ml mild olive oil or vegetable oil

* Zest of 1 large orange

* 75ml fresh orange juice

* 1 tsp vanilla

* 1½ tsp baking powder

For the syrup:

* 150g caster sugar

* 150ml water

* Juice of 1 orange

* A few strips of orange peel

* Small piece of cinnamon stick, optional

Let the filo dry out until brittle, then crumble it into pieces.

Whisk the eggs and sugar, then mix in the yoghurt, oil, orange zest, juice, vanilla and baking powder. Fold in the dried filo and pour into a greased tin.

Cook on Bake at 160°C for about 25–30 minutes. Check it at 22 minutes — it should be a lovely deep golden colour and a skewer should come out without wet mixture on it. If the top is browning too quickly, loosely cover it with foil.

Meanwhile, simmer all the syrup ingredients together for 8–10 minutes, then allow the syrup to cool.

When the cake is hot from the air fryer, gradually spoon the cool syrup all over it. Leave it for at least 1–2 hours to soak in before eating; it’s even better after a few hours in the fridge.

I’d serve it exactly like we had it in Crete: a small square with thick Greek yoghurt or vanilla ice cream and some fresh watermelon alongside.

If using an oven then Heat the oven to 180°C / 160°C fan and grease a roughly 20cm square baking dish, and cook in one dish

Pastel de Naranja Cretense en el Air Fryer (Receta de Nuestras Vacaciones)

Una deliciosa receta de pastel de naranja cretense, perfecta para disfrutar en casa y recordar esos momentos especiales en vacaciones en Creta.

Ingredientes para Pastel de Naranja Cretense en el Air Fryer

  • Filo pastry – 200g
  • Huevos – 2
  • Azúcar – 100g
  • Yogur griego – 150g
  • Aceite de oliva suave o aceite vegetal – 75ml
  • Ralladura de 1 naranja grande
  • Jugo de naranja fresco – 75ml
  • Esencia de vainilla – 1 tsp
  • Polvo de hornear – 1½ tsp

Instrucciones para Pastel de Naranja Cretense en el Air Fryer

Crumble el filo pastry en trozos pequeños y secos. En un tazón, bate los huevos y el azúcar, luego agrega el yogur, aceite, ralladura de naranja, jugo de naranja, vainilla y polvo de hornear. Incorpora el filo seco y vierte la mezcla en un molde engrasado. Cocina en el Air Fryer a 160°C durante 25-30 minutos. Mientras tanto, hierve los ingredientes del almíbar hasta obtener una consistencia espesa. Una vez que el pastel esté listo, vierte el almíbar sobre él y deja reposar por al menos 1-2 horas antes de servir.
